I always want to make something “more” for my kids when it comes to lunch time. Something outside of the usual PB&J or chicken nuggets. Trust me, I’m on the go too and get it. No judgement here for quick and easy lunches. However, I am finding that playing around more with lunch ideas that I can still find quick lunches that pack some healthy factors still. This is also perfect to bake prior and pack for back to school!
This is an easy and kid friendly turkey, mozzarella and tomato croissant that we made today. The kids loved it! Best of all, the tomatoes were never remarked about. I’m always told how much my daughter “hates” tomatoes. She ate them today! Score for Mom!
Using Pillsbury® Crescents, I simply laid them out on a baking sheet after preheating our oven. I sliced a small piece of mozzarella cheese from a fresh blog and cut grape tomatoes in thin slices. I laid over the cheese first, then the turkey (fresh sliced from the deli) and then the tomatoes. Simply roll up the dough into a croissant and bake for nine minutes. Cool and you have a “small hands” friendly sandwich with some hidden goods inside.
