Peppermint meringue isn’t all that hard to make either. It is simply having the patience to let them bake properly in the oven and ensure that the meringue peaks properly while mixing.
What should I do if my meringue cookies are chewy?
If your meringues come out chewy in texture instead of crisp and airy, try baking them for another 10 minutes.
This might give them more time to dry out.
These treats can have a nice marshmallow texture on the inside if you prefer, but they should never be sticky.
Candy Cane Peppermint Meringue Drops Recipe

Begin by preheating the oven to 175° F. Line two baking sheets with parchment paper.
Put egg whites and sugar into a mixer metal bowl and set over simmering hot water until the sugar is dissolved.
Return the bowl to the mixer stand and using a whisk attachment, beat until the stiff peaks form.
This can take some time, about 5 minutes or so. Add the peppermint extract and lightly mix it for another minute.
Paint the inside of a pastry bag with red or green gel food coloring. You can also use both colors by interchanging them on each side.
Fit the pastry bag with a medium-sized star tip and fill the bag.
Squeeze about 2-inch size drops on the lined baking sheets.
Bake for 2-hours. Let the drops cool to room temperature on the baking sheets.
You should be able to easily remove them from the parchment paper without sticking.
Meringues last for about a week when stored in an airtight container.
