Chef Mickey’s Cheesy Bacon Potatoes Recipe

I am very excited today to be a part of a fun recipe collab with some other amazing ladies of the Disney Social Media Moms community.

We have come together to give you eleven Disney inspired recipes. If you need to make some magic at home, try this Chef Mickey’s Cheesy Bacon Potatoes recipe.

Disney copycat recipes are some of my favorite things to cook and bake at home. When I can’t get to the Parks, at least I can have some of the treats at home.

My Chef Mickey’s Cheesy Bacon Potatoes are ooey and gooey and yes, I said bacon!

I think every Disney fan can agree that this Disney breakfast potatoes recipe is a favorite.

Over at Chef Mickey’s at Walt Disney World Resort, they serve some pretty amazing Cheesy Bacon Potatoes.

I decided to make my own ‘twist’ on this recipe by replacing the shredded potatoes with cubed cut red potatoes.

I also substituted the cheese sauce with a white queso sauce. This created a smoother and rich flavor to this Disney copycat recipe rather than the sharp taste of regular American style cheese.

Here is my take on Chef Mickey’s Cheesy Bacon Potatoes recipe.

How to Make Chef Mickey’s Cheesy Bacon Potatoes

Ingredients

  • diced potatoes
  • white queso dip
  • whole milk
  • dried dill
  • shredded cheddar cheese
  • shredded mozzarella
  • bacon bits (reserve 2 tbsp for garnish)

Cheesy Bacon Potatoes Recipe

Preheat oven to 350°.

Combine all of the ingredients except for the cheeses and reserved bacon bits.

Mix well.

Spread the mixture evenly into a casserole dish.

Place in the oven and bake for about 35 min. until potatoes are tender.

Top with the shredded cheddar, mozzarella, and remaining bacon bits.

Place back into the oven and bake for about 10-15 min. until cheeses are melted.

Take out of the oven and rest for 10 min. before serving.

Chef Mickey's Cheesy Bacon Potatoes
