These Chocolate Caramel Marshmallow Pops are inspired by some favorite treats at Goofy’s Candy Company in Disney Springs at Walt Disney World. These decadent desserts are what my family and I love to spend our last snack credits on when we are on the Disney Dining Plan. Whenever we have leftover credits, you’ll find is in line gobbling these up.
I always miss the adorable sweets that are at Disney Parks when we get home. I miss my days of living in Orlando and going to Walt Disney World whenever I felt like having a snack. When I can share a recipe that brings a bit of magic home, I get excited.
These marshmallow pops will be a perfect addition to any home Disney inspired recipe collection. Perfect for parties or favors, these can make any get together sweeter.
Chocolate Caramel Marshmallow Pops
What you need to make Goofy’s Candy Company inspired Chocolate Caramel Marshmallow Pops
- 24 regular-size marshmallows
- 1 (11.5 ounces) bag milk chocolate chips
- 1 (11 ounces) bag caramel candy, unwrapped
- 2 to 3 tablespoons heavy cream
- 1 cup roasted peanuts, coarsely chopped
- 1 teaspoon coconut oil
How to make Chocolate Caramel Marshmallow Pops
- Press four marshmallows onto a straw or treat stick with a twisting motion. Lay on waxed paper.
- Add caramel and whipping cream to a microwave-safe bowl. Melt the caramel in the microwave according to package directions giving special care not to overheat the candy.
- Pour caramel over the marshmallows, coating completely and allowing the excess to run back into the bowl.
- Roll the coated marshmallows in chopped peanuts. Place marshmallow pop on waxed paper until set.
- Melt the milk chocolate in the microwave according to package directions giving special care not to overheat the candy. If the candy is overheated, it will be too thick. You can add 1 teaspoon of vegetable shortening or coconut oil to help thin the chocolate but do not add any other type of liquid as the candy will seize and harden.
- Pour chocolate over the marshmallows, coating completely and allowing the excess to run back into the bowl. Place on waxed paper and refrigerate until set.
- Transfer melted milk chocolate to a piping bag or zip-top freezer bag. Snip the corner of the bag and drizzle melted candy over the marshmallows.
- Allow the marshmallows to rest on waxed paper until set before packaging or serving. Best if stored in an airtight container in the refrigerator.
How long will these marshmallow pops last?
If stored in an airtight container in the refrigerator, these marshmallow pops can last for a few weeks before going stale. The faster they are consumed, the better. I highly doubt they will stick around for too long anyway.
How to properly melt chocolate in the microwave:
Place the chocolate into a microwave-safe bowl and place it in the microwave. Set the cooking time to 2 minutes and start the microwave. Do not step away. Stop the microwave every 15-20 seconds and stir the chocolate with a rubber spatula. As the recipe calls for, do not overheat chocolate so that it does not become overly thick.
