The kids and I enjoy making cookies at any time of year. Chocolate chip cookies are a classic favorite but Chocolate Chip Caramel Cookies are a sweet twist. This Chocolate Chip Caramel Cookies recipe is very simple and creates a rich and savory treat.

This recipe is perfect to create around 6 dozen cookies. Perfect for gatherings, bake sales, and simply just because. These Chocolate Chip Caramel Cookies will leave everyone wanting more of the delicious sweet and savory flavor.

Chocolate Chip Caramel Cookies

Ingredients 

  • 2 sticks of unsalted butter at room temperature
  • 1 cup granulated sugar
  • 1 1/2 cups brown sugar
  • 1 tbsp vanilla extract
  • 2 eggs
  • 4 cups all-purpose flour
  • 1/2 tsp baking powder
  • 1 1/2 tsp baking soda
  • 1/2 tsp salt
  • 1 bag Ghirardelli Baking Chips, Premium, Caramel Flavored
  • 1 bag Ghirardelli 60% Cacao Chocolate Premium Baking Chips

Recipe

  1. Using a mixer, cream together the butter and sugars until combined and fluffy.
  2. Add in vanilla extract and eggs and beat until combined.
  3. Slowly add flour, baking powder, baking soda, and salt. Beat until combined.
  4. With a wooden spoon, stir in chocolate and caramel chips. The batter will be crumbly in texture.
  5. Preheat oven to 350° and line a cookie sheet with parchment paper.
  6. Roll dough in hands to create a 1 tbsp sized ball and place each on the cookie sheet about 2 inches apart. Be sure to press your thumb down into the center of each ball for better baking.
  7. Bake for 12 minutes until edges are slightly golden brown.
  8. Remove from the oven and let cool for 3 minutes on the baking sheet before transferring to a cooling rack.
  9. Let cookies cool before serving. The caramel chips will not melt completely so as to create a chunky texture.

TIP: Be sure to let your cookie sheets cool for at least 10 minutes before putting more dough down to bake. The cooler the baking sheet the better the cookies will rise for that perfect cookie that is crispy on the outside and gooey on the inside.
