Cinnamon Butterscotch Cookies Recipe

Have you ever noticed that they tend to either be too hard or don’t rise properly in other recipes? Hopefully, this easy Butterscotch Cookies recipe will give you exactly what you have been looking for.

What Butterscotch Chips are best for baking?

I highly recommend Guittard Butterscotch Chips. The flavor cannot be beaten and they are excellent in holding their shape while baking. They are a little pricer than other brands but you can get them at places like Winco Foods for under $3.00 per 12-ounce bag.

What You Need to Bake Cinnamon Butterscotch Cookies:

  • melted butter
  • packed brown sugar
  • granulated sugar 
  • large eggs
  • vanilla extract
  • all-purpose flour
  • baking soda
  • salt
  • ground cinnamon 
  • butterscotch chips 

How to Make Cinnamon Butterscotch Cookies:

Melt the butter in a medium-sized pot. Remove from the heat and stir in the sugars until combined. 

Move the mixture into a mixer bowl and add the eggs and vanilla extract. Mix on a low setting until light in color.

In a separate bowl, add flour, baking soda, salt, and cinnamon. Mix together. 

Slowly add dry ingredients into the wet mixture and mix on a medium setting until the batter has smoothed. 

Preheat oven to 325° F and line baking sheet with parchment paper.

Stir in the butterscotch chips on a low setting and let the batter sit for 10-20 minutes to cool. 

Once the batter has cooled down and the flour has settled into the mixture, begin scooping the batter onto the parchment-lined baking sheet. Scoop cookies out to about 1 1/2 tablespoon.

Bake for about 12-minutes until edges are golden brown. Leave cookies on baking sheet for about 5-minutes to cool and harden a bit. 

Put the cookies onto a cooling rack to cool to room temperature. Be sure to store in an airtight container.
