What you need to make Egg White Salad
- large egg whites
- chives
- low-fat mayonnaise

How to make Egg White Salad with Chives
Remove yolks from hard boiled eggs by cutting in half and discarding. Carefully chop the large egg whites into bite-sized pieces.
Put chopped egg whites into a medium-sized mixing bowl. Add in the chives, low-fat mayonnaise, and Dijon mustard. Mix well. Add salt and pepper to taste.
Enjoy over a bowl of mixed greens. This recipe serves about 4 when using 1/2 cup per serving. This recipe would also pair well with avocado and is a great way to use leftover hard boiled eggs from holidays such as Easter.
