Movie Night in our house means that the kids get to pick the meals for the evening. I’m sharing with you our Fruit and Veggie Rainbow Pizza Bagels. They are fun and very easy to make.
Pizza always seems to be one of the top picks. I got to thinking, why not create a fun pizza bagel bar with the kids? Let them pick out some fruits and veggies to put on their pizza bagels. They have something they love, and I’m happy that it is a little healthier than delivery.
Fruit and Veggie Rainbow Pizza Bagels
For this “hands-on” meal, you will need plain bagels, marinara sauce, shredded mozzarella cheese, a bag of frozen mixed vegetables (including broccoli, yellow squash, and carrots), red pepper and blueberries. Now, I know what you’re already thinking. “Blueberries with veggies?!” Go with me here, it works. It even gives a bit of a sweet kick with the red pepper to entice picky eaters. I have two.
Thaw out your mixed vegetables prior to cutting. Preheat your oven to 450°(F). Cut all of your veggies into small pieces to fit the bagel halves and set aside. Cut the halves of each bagel into another half. Creating a rainbow shape. You can do as many of these as you would like. One plain bagel will make four rainbows.
Add about a tablespoon of marinara sauce to each half, spreading slowly with a spoon. Add as little or as more as you wish. Take a pinch at a time of mozzarella cheese and sprinkle over the top.
Now it is time to add the fruit and veggies in the shape of a rainbow. First, add the red peppers to the top of the bagel. Then carrots, yellow squash and finally the blueberries. You will notice you use less of each, each time to give the rainbow shape.
Place on a baking sheet and bake in the oven for about eight minutes. Don’t let your bagels burn. Your blueberries might bleed a little, but that’s half the fun.
Let each cool before eating and enjoy it!
Let the kids put their fruit and veggies on their bagels for added fun and memories. I don’t know about your kids, but if they get their hands dirty, they seem to love what they eat.
