Greek Garbanzo Bean Salad with S&W Beans
For this recipe, I used their Garbanzo Beans with 50% less sodium. This is a major plus for our family because I have members who suffer from water retention. I like that I can put a fresh salad on the table that nobody has to worry about later. These Garbanzo Beans do not give off a waxy texture that others do. They have a perfect crunch.
- 1 can of S&W Garbanzo Bean with 50% less sodium drained and rinsed
- 2 cucumbers, halved lengthwise and sliced (keep peel on)
- 1 pint cherry tomatoes, halved
- 1/2 chopped onion
- 1 tbsp minced garlic
- 1 (6 ounce) can sliced black olives, drained and rinsed
- 1/2 cup crumbled feta cheese
- 1/2 cup balsamic vinaigrette
- 2 tbsp lemon juice
- 1/2 tsp garlic salt
- 1/2 tsp ground black pepper
- Mix all of the ingredients in a medium sized bowl.
- Refrigerate for two hours.
- Before serving, toss the ingredients again.
