Easy One Pan Baked Parmesan Chicken and Vegetables Recipe

What type of pan to use for one pan baked chicken?

Many people use a regular baking sheet for a one pan recipe. I personally prefer to use a deeper baking dish that will house a good amount of chicken and vegetables. 

What vegetables are best for one pan meal recipes?

The best vegetables to use for one-pan meal recipes are asparagus, baby red potatoes, squash, and zucchini.

These soften well in oils and spices to deliver great flavor to both themselves and the meat.

What you need for baked one pan chicken:

  • boneless skinless chicken breasts
  • butter
  • salt and pepper
  • Italian bread crumbs
  • grated parmesan cheese
  • garlic powder
  • olive oil
  • sliced zucchini
  • sliced yellow squash
  • baby red potatoes cut into fourths

How to make One Pan Baked Parmesan Chicken and Vegetables:

Preheat oven to 350 degrees and lightly spray cooking spray in a 9×13 inch baking pan.

Melt the butter in a shallow dish by microwaving it in 30 seconds intervals. In another shallow dish,  add the Italian bread crumbs, Parmesan cheese, and garlic powder. Salt and pepper the chicken.

Dip the chicken into the butter and then coat in the Parmesan garlic crumbs. Layout chicken evenly in 9×13 pan.

In a medium-sized bowl add the zucchini, yellow squash, and potatoes. Toss all of the vegetables well in olive oil.

Add salt and pepper to taste and remaining Parmesan garlic bread coating. Lay the mixed vegetables out on the sides of the chicken. 

Bake everything for 30-40 minutes until chicken is cooked throughout and the vegetables are tender.
